The Zähringer wine estate in Heitersheim in Baden is located between the Black Forest and Oberrheingraben. The family business in Baden produces terroir-accented and authentic wines. The penchant for perfection and the passion in the vineyard are the components that create enormously long-lasting (red) wines with a finely woven tannin structure " matured wines are extra-dry, round and harmonious. All of this takes place in real organic quality.
The success story began in 1844 and since then the estate has been continuously expanded and developed. Organic viticulture started back in 1987, and since 2005 the principles of biodynamic cultivation have been internalized. In 2010, the Demeter Association officially recognized the systematic expansion of biodynamic farming methods.
About the wine:
Grown on limestone in Dottinger Castellberg. Spontaneously fermented in barriques.
My tasting notes:
In the glass a bright golden yellow color.
On the medium nose aromas of peach, apricot and ripe pear with hints of vanilla, flowers and white pepper.
On the palate dry, medium bodied with medium- acidity and nice freshness. Light waxy with a recall of flavors and a mouthfilling finish.
Very nice.. bit of Condrieux style.
Great companion for aromatic and fine fish cuisine, halibut with truffle, anglerfish with saffron, tuna tartare with lemongrass; Veal breast and poultry with light sauces.
