Pairing Suggestions
Ok...first time sitting outside this year so I picked a nice white one to celebrate the sun. Villa Corniole - Trentino Romato Pinot Grigio 2014 (84 tsomw points)
The maturation on the skins for several hours and the light upbringing in oak barrels give the wine a copper-amber color.
In the nose orange blossom, fruity tones and light vanilla. On the palate rich, full in the mouth but also soft. The aftertaste is rich a light creamy.
Grapes: Pinot Grigio 100%.
Vineyard location: Piana Rotaliana.
Soil type: alluvial land?ll, highly fertile top soil, excellent drainage.
Vini?cation: manual grape selection and harvesting, then de-stemming. Cold maceration for some hours and pressing. Fermentation at a controlled temperature partly in steel and partly in wooden vats, where the wine is aged for about one year. Then, further ageing in the bottle.
To be served at: 10-12° C.
Food Pairing: not only good as an aperitif. This wine enhances and brings a note of sweetness to strong ?rst courses or white meat dishes, shell?sh, mollusks and raw ?sh. Also good with young fresh cheeses.
