About the vineyard
Stony and calcareous clay soil. Slight gentle slopes in the foothills of the protected Spanish Pyrenees. The altitude is 725-740 m. Limestone-rich soil with lots of gravel (Grenache and Syrah) and fertile clay soil (Cabernet Sauvignon). Conversion to biological methods without certification. Positive influences on the climate by the Tra Montana and the Mediterranean.
Vinification
Manual harvest with a cold indwelling for two days. Temperature controlled fermentation on stainless steel for the Syrah, but the must of the Cabernet and the Grenache yeast on open small oak wooden barrels. This makes an intensive pigeage (breaking and immersing the grape cake) possible. Fermentation on wood with the stirring of the fine yeast spores. Total 18 months aging on French oak. Then soft and very well-groomed bottling.
