Terroir al Limit - Terroir Historic negre 2018
Pairing Suggestions
Terroir al Limit - Terroir Historic negre 2018 (88 TSW)
Blend of 25% Carignan en 75% Grenache.
The grapes come from 9 different locations in the Priorat, the soils are predominantly characterized by the legendary Llicorella slate. In the cellar, all the grapes are placed in cement tanks and fermented spontaneously with the vineyard's own yeast. After the fermentation is complete, the old, pneumatic press is used, and no expansion in the wood is done to preserve the fruity, fresh character of the wine.
My tasting notes:
For this young wine a good decant helps. I used my power toy the Vspin.
In the glass a slightly transparent deep red, violet color.
On the nose a (not typical Priorat) medium+ nose aromas of black ripe cherries, blueberries and smoky liquorice with hints of spices, dried herbs and some tobacco.
On the palate medium+ bodied, medium+ acidity and medium grippy tannins. Nice freshness and mouthfeel with concentrated flavours of liquorice, blueberries, ripe red fruits and spices. The finish is long, spicy and persistent.
It is the year 2000 when Dominik Huber and Eben Sadie meet at Mas Martinet in Spain. In 2001 they pick grapes and become friends with the Perez family in Cims de Porrera for six weeks. After working together for two months at Spiceroute in South Africa, project started together in a small project in Priorat. With the help of the Perez family they can buy some grapes and together they make the first volume Dits del Terra. In 2003 they could start their own cellar in Torroja del Priorat where over the years more and more different wines are made.
Since 2007, Dominik has been working full-time on his Terroir al Limit and from that moment on the way of making wine has changed. Barriques give way to barrels from 1200 to 3500 liters and 500-liter barrels are introduced. A method of vinification where extraction makes way for a traditional Burgundian style of wine making. "Vinification entière", not a pigeage remontage, all to avoid the power Priorat was always known for. In the beginning.
