Tenuta San Guido - Le Difese 2015 (87 TSW)
The winemakers of the famous Sassicaia also wanted an entry-level wine to drink young: Le Difese.
Tenuta San Guido is located on the Tyrrhenian coast between Livorno and Grosseto, in Maremma. The area extends over 13 km between the sea and the hills. Mario Incisa della Rocchetta planted Cabernet Sauvignon in 1942, which earned him Sassicaia. Le Difese (Toscana IGT) has been produced since 2002.
Fermentation in temperature-controlled stainless tanks, the temperature never exceeds 30° C, the maceration lasted 15 days for the cabernet sauvignon and 12 days for the sangiovese. This is followed by a maturing of around 12 months in both French and American barriques.
My tasting notes:
Transparent dark red purple color
On the medium+ nose aromas of blackberries and cassis with very gentle liquorice.
Delicate red fruits, well balanced, medium tannins, good acidity, structured, light tannic finish.
Pairing with pasta or risotto based on tomato or meat sauce, poultry with sauce, white meat with sauce, red meat, grilled or roasted.
