HARVEST
Exclusively by hand in small boxes, with specialised and skilled labor.
WINEMAKING
Soft and quick pressing of the grapes, gently pressed. Fermentation at 15 °C in stainless steel containers and maturation on lees for 7 months with frequent battonage during the first aging phase. Subsequent bottle aging for another seven months.
