100% Cabernet Sauvignon from San Gimignano in Tuscany.
Still very young this red one from the 2018 vintage. Tuscan producers were pleased with the 2018 vintage. While warm, the heat wasn’t as excessive as elsewhere in Europe, and the watchwords seem to be silkiness, elegance and some surprising freshness.
The soil on the estate is built in layers of limestone and mixed with clay and pebbles, a mix that gives these wines the necessary minerality. (Pliocenic sand)
Maceration (20 days) and fermentation in rotating stainless steel tanks at controlled temperatures of 28 to 32 ° C for 4 days. Complete malolactic fermentation. The aging takes place in new barrique, medium toasted, made in France for a period of 18 months. About 2000 bottles produced in one year.
My tasting notes:
In the glass a deep ruy red color with purple reflections.
On the medium(++) nose intense aromas of black fruit, currant and cherries with hints of cedar, smoke and undergrowth.
On the palate dry, full-bodied with medium(+) acidity and tannins. Still young in the mouth but with a lot of potential. Smoky, spicy, toasty black fruits with herbs and espresso in the background. Medium(+) length spicy finish.
Ideal with grilled meat, duck, salted meat and lamb chops.
