Penedès (Spain) blend of 81% Xarel·lo, 9% Chardonnay and 10% Pinot Noir cultivated applying biodynamic farming. Good alternative for Champagne during the holidays.
In Blanca Cusiné, the traditional variety Xarel·lo is joined with the two historic grape varieties in sparkling wine, Chardonnay and Pinot noir. Everyone under the influence of the climate and the soil in the high mountains of Penedès. Pinot Noir is vinified like a Blanc de noir in order to offer an elegant and refined sparkling wine.
Blanca Cusiné Brut Nature comes from vineyards on the family estate that have been cultivated under ecological premises, without using pesticides or synthetic chemicals. They use natural techniques like using sheep herds to fertilise vineyards and beehives to pollinate flowers to maintain the natural balance of the terroir and the strain. The harvest is carried out manually at the optimum moment of ripeness.
Chardonnay and Xarel·lo were fermented in stainless steel tanks at 16°C. Pinot Noir was fermented in new French oak barrels at 20?C. Pinot Noir has aged over lees during two months with battonage practiced three times per week. Second fermentation in the bottle following the traditional method, with ageing for 80 months.
My tasting notes:
In the glass a deep golden yellow color.
On the medium(+) nose aromas of dried fruit, apricot and raisins with hints of toast, honey and hazelnuts.
On the palate dry, medium(+) bodied with elegant acidity and nice mouthfeel. Flavours of orange zest, acacia, candied fruits, peach, nuts, biscuit and flowers and a lengthy light almond finish.
Ideal with a great variety of dishes. Perfect with Catalan cream and pine nut ‘coca‘.
