Parés Baltà - Cava Cuvée De Carol 2011 (92 TSW)
This must be one of the best Cava's I tasted :)
Blend of 60% Macabeu and 40% Chardonnay cultivated applying Biodynamic farming from Penedès / Catalunya.
Macabeu from an old vineyard of Cal Miret combined with Chardonnay cultivated at high altitudes, together with a touch of oak barrel.
The Chardonnay ferments at 16-20ºC in new french oak barrels during 13 days. Macabeu ferments in stainless steel tanks at 16ºC during 15 days and with daily battonage at the end of the fermentation. Ageing over thin lees for two months with battonage 3 times per week for the Chardonnay. Second fermentation in the bottle following to the traditional method, with ageing for 90 months.
My tasting notes:
In the glass a medium(+) straw yellow color with copper edges (looks oxidized)
The bubbles are small and persistent.
On the medium(++) nose aromas of yellow apple, candied apricot and yeast with hints of biscuit, vanilla, honey, orangepeel, cream and smoked almonds.
On the palate dry, medium(+) bodied. Very authenthic and complex. Fresh and sharp with a long, elegant and dry finish. Spectacular.
Enjoy it with hearty dishes; legume and poultry stews, and roasted white meat.
