From DO Penedès comes this 100% Xarello, cultivated with organic, biodynamic methods.????
Bottle nr 905 of 2399 bottles – so very limited edition.
This Xarello (the cava grape) is fermented in amphoraes which were especially made with red clay (amphora Roja) of their estates, the same clay that was used by Iberians thousands of years ago.
About the vinification:
Natural alcoholic fermentation with wild yeasts in clay amphorae. The wine has oxidative properties as a result of the porosity of the clay. No sulfite added and no wood aging.
My tasting notes:
In the glass a intense golden yellow color.
On the medium+ (light oxidative) nose aromas of baked apple, apricot and peaches with hints of beeswax, orange zest, honey and bananas.
On the palate dry, medium+ bodied with medium acidity and light chalky, nutty texture. Complex with lots of layers. Long finish, with notes of dried fruits and honey. Very interesting for those who like this style.
To pair with rice, grilled and baked fish.
