Pago de los Capellanes - Ribera del Duero Joven Roble 2016 (87 tsomw points)
In the glass an intense purple, ruby red color.
On the nose intense aromas of dark fruit like blackberries and cherries with hints of herbs and spices.
On the palate dry attack, full mouthfeel but not overwhelming. Tannins available but nog disturbing. Nice long aftertaste with spices, wood and herbs.

Vineyards
Selection of parcels in our Santa Gadea vineyards. Chalky-clay soil, very poor fertility and low yield.
Production
Following a short cold pre-fermentation for 6 days below 12ºC, a controlled alcoholic (primary) fermentation is initiated, with seeding using our selected yeasts.
Fermentation takes place in stainless steel tanks with pumping over and two controls per day for density and temperature. At the end of this fermentation period the malolactic fermentation begins without the addition of bacteria, at a winery temperature of 22ºC for 24 days.
The wine is transferred by separating it from the lees without filtering or clarifying.
The wine is then rested in 300 litre French oak casks for 5 months.
Serving temperature 16-18ºC.
