A sparkling wine from Croatia? How cool!
Korak winery is one of the best appraised and known Croatian wineries from the continental part of Croatia. They have been producing wines for few generations now, on the hills of Plešivica. Their vineyards are located on the S, SE and SW sides of the best locations on Plešivica, on 350-400 meters above the sea, each having it’s own microclimate. They grow riesling, sauvignon blanc, chardonnay, pinot gris, syrah, pinot noir and portugiser. Korak’s wines are not a product of modern technology, but a craft that combines nature, tradition and new knowledge. They strive to produce premium wines that satisfy most demanding clients.
About this sparkling wine:
Korak Winery started producing sparkling wines in 2013. applying the traditional champenoise method. Strategy in producing sparkling wines is to make them mature on their own to their best version, avoiding any artificial additives in order to speed up the process. This makes their sparkling wines particularly dry, mineral and fresh.
KORAK Brut Blanc de Blancs sparkling wine is pure and precise. It is an absolute dry sparkling wine, with no “liqueur d’expédition” or dosage liquor added. Brut nature is made of 100% Chardonnay, bottle-aged for 48 months or 4 years on its own lees. It contains only the wine’s natural residual sugar at less than 2g per bottle. Moreover, the use of an absolute minimum or no sulphur gives the wine the freedom to express itself.
Base wine fermentation takes place in large wooden barrels (3000l), while secondary fermentation takes place in the bottle on natural lees.
My tasting notes:
Persistent and fine bubbles. Serve it chilled between 6 and 8 C.
In the glass a bright citrus yellow color with golden reflections.
On the medium nose aromas of yellow apples, lemon and chestnuts with hints of yeast, brioche and grapefruit.
On the palate dry, medium bodied with great balance of fruit and yeast flavours. Rounded and lengthy aftertaste.
