100% Nebbiolo bubbly from the Piedmont region. Not a bad start of the week isn't it?
A while ago I already tasted their Rossese Bianco.
The grapes for this spumante are picked in the first part of September, the Nebbiolo grapes are crushed. The must is macerated for about 6 hours. Then, after gentle pressing, the must is placed in tanks with temperature control. Fermentation ends in about 20 days.
In the spring of the following year, the wine is bottled with its own yeasts to start the second fermentation, which is responsible for the final bubble in the wine. The wine spends about 36 months on the lees, with remouage bottle, before disgorging, which takes place in July.
My tasting notes:
In the glass a bright orange, pink color. Powerful but gentle tiny bubble.
On the medium nose aromas of strawberries, citrus and pomegranate wit hints of herbs, flowers, brioche and hazelnut.
On the palate dry, medium(+) acidity and medium alcohol. Juicy and long lasting strawberries, peach, grapefruit and brioche with a creamy texture. Good balance with fruit, acidity and alcohol. Medium(+) citrus length finish.
The bubble is the party wine by definition. The flavor and the softness of this wine make it perfect for an aperitif, a toast and dishes based on fish.
