The name Le Pupille comes from the two farms on top of the two hills, which are considered to be the eyes (pupils) that watch over the medieval village of Pereta. A true pioneer in Maremma, the southern part of Tuscany, Fattoria Le Pupille is inextricably linked to the production of red wines.
Sangiovese, the grape considered the king of this domain, occupies 70% of the vineyards and is the soul of their famous Morellino wines. Elisabetta Geppetti turned this family estate into a modern and enterprising wine estate, which today has 75 hectares of vineyards, divided like a mosaic between the beautiful areas of Maremma.
In 1987 they launched their first Saffredi, the wine that has put this region on the map for its excellence, not only in Tuscany, but also far beyond.

Soil texture: clayey with an important presence of sandstone.
Harvest time: second half of September
Fermentation temperature: 15°C in 500 Lt. new oak tonneaux
Maturation: After the alcoholic fermentation in 500 Lt. new tonneaux, the wine evolves in the same tonneaux for more 16 months. The maturation will continue for other 24 months in the bottle.
Production: only 1200 bottles
My tasting notes:
In the glass a deep golden amber color.
On the medium(+) nose aromas of peach, melon and pineapple with notes of honey, nuts, almond and flowers.
On the palate dry, medium(++) bodied with intense and rich mouthfeel. Light creamy with a long and intense finish.
A very typical wine to enjoy with Beluga caviar, linguine with cuttlefish ink, Blue Stilton.
