This week we joined a wine and dine at restaurant De Leuf with the great wines of Fattoria Le Pupille.
We also had the chance to taste their Flagship. Still young but very promising!
Fattoria Le Pupille - Maremma Toscana Saffredi 2015 (89 tsomw points)
In the glass a dark crimson red color.
On the nose intense aromas of black currant, plums, cherries and cocoa with hints of spices and violets.
On the palate lots of power, tight tannins, high acidity with great juiciness and freshness. Give this baby some more years and the wood will be better integrated with smooth tannins.
Winemaker notes:
Saff redi is the icon of Fattoria Le Pupille. A wine which owes his birth to the desires and intuitions of Elisabetta, who with the precious help of Giacomo Tachis, wanted to make a great wine in Maremma, a place which until then hadn’t relished in any fame related to the success of its wines. Elisabetta wanted to dedicate this wine to Fredi, the man who inspired her passion for wine.
Variety: 60% Cabernet Sauvignon, 30% Merlot, 10% Petit Verdot
Alcohol: 14.5%
Total Acidity: 5.7 g/L
Vineyards position: Saff redi vineyard (Pereta) altitude 250 meters above sea level.
Vineyards surface: 6 ha
Vineyards exposure: south-west older vineyard, south-east new vineyard
Type of terrain: predominantly of sandstone origin, with little organic substance or clay
Date of implantation: the older vineyard in 1987, the new one in 2006
Density of implantation: 4000 plants/ha
Cultivation system: pruned-spur cordon-trained
Grapevine/Hectare yield: 75 ql.
Harvest: middle of September for the Merlot, end of September-beginning of October for the Cabernet Sauvignon and mid October for the Petit Verdot.
Fermentation Temperature: 26º-28ºC in inox steel
Maceration time: 15-20 days
Aging: 18 months in 75% new barriques
Production: 30.000 bottles
Best combined with: important plates, such as red meats and game. It is also perfect with dark chocolate and in a contemplating environment, such as whilst enjoying a cigar.
