The talented Paquet family makes its name in the white wine appellations of Bourgogne. Brother of Mathieu and son of Michel Paquet from Domaine des Valanges, Camille is the family's winemaker. He believes in making his wines as natural as possible using indigenous yeasts, no chemicals and with barrels that are always two or three years old, so that the oak does not interfere with the beautiful fruit flavors.
In 2018, a first part of the domain will be ready for the official classification according to organic viticulture. In that year the newly composed domain also started a new chapter with the change of the name 'Domaine des Valanges' to 'Famille Paquet'. This comprehensive name makes the range clearer for the consumer and it strengthens the family image.
This new generation has all craftsmanship to manage the domain in a very professional manner.
About the wine:
After several years of bad weather conditions, 2018 is a quality vintage, also satisfactory in terms of quantity. Winter has been cold, mild spring and summer synonymous with heat and drought. The harvest began in early September in order to maintain the balance of the wine and the freshness of Chardonnay. A rich, elegant and powerful vintage
The vineyard is made up of a plot on 1.15 hectares. The vines (of a middle age of 56) are located in the village of Davayé, and are planted on the Les Cras . A stony soil, rich in hard limestone.
The wine maturates 12 months in barrels (French oak wood of Jupille, cooper CAVIN, 10% new barrels, barrels from 1 to 7 years), then in barrels for 3 to 4 months.
My tasting notes:
In the glass a bright golden yellow color with green reflections.
On the medium nose aromas of peach, pear and almonds with hints of white flowers, vanilla and nutmeg.
On the palate dry, medium bodied with medium acidity and nice freshness. Nicely balanced, light waxy but with enough freshness. Nice crisp finish.
To pair with white meat, goat cheese, cream dishes and foie gras.
