The renowned Domaines Ott wine house was established in 1896 by agricultural engineer Marcel Ott. Domaines Ott consists of three different wineries, namely Domaine Château de Selle, Domaine Clos Mireille and Domaine Château Romassan. These three 'Domaines Ott' produce high-quality wines. From 2009 Christian and Jean-François Ott lead the house. Chateau de Selle from Domaines Ott * is more than rosé, Chateau de Selle is a gastronomic Provence rosé.
Pure craftsmanship where the passionate family Ott is involved day and night. Chateau de Selle is not an ordinary rosé but an icon of wine. The way of making wine is ultra biodynamic with attention to the terroir. The harvest takes place in August: (usually) 100 days or four moons after the flowering period. The grapes are picked by hand and collected in crates. After this, a second selection takes place by careful pressing, fermentation in heat regulating vessels and aging in oak barrels for 6 to 8 months.
My tasting notes:
In the glass the typical Provence rosé color. Light salmon with a golden rim.
On the nose subtle aromas of peach, lime and apricot with hints of herbs and white flowers.
The palate is dry, medium-bodied and soft. It shows aromas of raspberries, strawberries and grapefruit with light vanilla and pepper.
It has a medium acidity and a long finish with beautiful minerality and light bitterness.
