Domaine Paul Thomas - Chavignol' Sancerre Rosé 2019 (87 TSW)
The weather is still very nice in The Netherlands so let's continue the roséallday vibes.
I paired it with fish from the bbcue.
This 100% Pinot Noir rosé has a medium salmon pink coral color.
On the nose medium aromas of strawberries, red currants and raspberries with hints of flowers, herbs and lemon peel.
On the palate dry, medium bodied with nice freshness and medium- acidity. Flavours of strawberries, peach and blood orrange and citrus with a light bitterness at the end.
Paul Thomas 'Chavignol' Sancerre Rosé 2019 was 100% vinified from pinot noir, mainly from the Terre Blanche terroir. After the harvest, the grapes were carefully selected on a sorting table. The fermentation took place in stainless steel tanks, after which the wine was bred for a short time on yeast, again in stainless steel tanks.
The Domaine Paul Thomas is a family winery in the heart of Chavignol and with 9 hectares is one of the smallest producers in Sancerre. A total of four wines are produced on 6.5 hectares of Sauvignon Blanc and 2.5 hectares of Pinot Noir. Two sancerres, one sancerre rouge and one sancerre rosé.
