Domaine des Diables & MiP contains 45 hectares, located in Provence and is managed by Aurélien Fabre, his daughter Virginie and her partner Guillaume. In recent years, a lot of money and energy has been put into the domain in the wine cellars, vineyards, but marketing has also been wisely not forgotten. The winery is located at the foot of the famous Sainte Victoire mountain in the municipality of Puyloubier.
The grape syrah, grenache, cinsault and rolle (vermentino) are planted on the stony soil. Modern and technically beautiful wines are produced, including those under the appropriate label MiP - 'Made in Provence'. Each vineyard plot is vinified separately, in order to be able to apply the correct vinification method per soil type. Moreover, due to the warm and dry climate, few diseases occur in the vineyards, so that nature-friendly integrated agriculture can be applied and sulfite no longer has to be added due to oxygen-free wine production.
After pressing, the grape juice is fermented in cooled tanks. Then the juice rests on its yeast sediment for about 4 months to develop a nice fruitiness.
In the glass a verly light salmon provence color.
On the medium nose aromas of red berries, raspberries and citrus with hints of elderflower and roses.
On the palate dry, medium bodied with medium acidity and nice freshness. Flavours are a recall of the nose with some mediterian herbs and spices. The medium finish is elegant and refreshing.
Serve as an aperitif and with meal salads and not too heavy Mediterranean dishes.
