Domaine des Diables - L'Hydropathe Rosé 2020
Pairing Suggestions
Domaine des Diables - L'Hydropathe Rosé 2020 (89 TSW)
Summer blend of Syrah (60%) and Grenache (40%)
Grapes from the vines closest to the Sainte Victoire. Cold maceration on skins for 5 hours, pressing with protection against oxidation, fermentation at low temperature. Aged on fine lees for 6 months
My tasting notes:
Not the typical Provence rosé you would expect.
In the glass a clear salmon pink color.
On the medium(+) nose aromas of grapefruit, raspberries and potpourri flowers with hints of strawberries and pear.
On the palate dry, medium(+) bodied with nice interplay between acidity and light sweetness of the fruit. A nice citrus hint in the medium length finish.
To pair with poultry, pasta with cream sauce, white fish, mussels, lobster, crustaceans and shellfish, asparagus, salad, salmon, cheese board, Sushi, risotto and Asian spicy food.
About the winery:
This family winery was founded in 1979 by Michel Fabre. It covers a total area of 45 hectares and is located at the foot of the Sainte Victoire mountain in the commune of Puyloubier. Syrah, Grenache, Cinsaut and Rolle (Vermentino) are mainly found on the predominantly stone ground. Since the arrival of the new generation -son Aurélien and daughter Virginie with partner Guillaume- there has been a breath of fresh air.
The working method in the domain has completely changed. Major investments were made in the cellars and vineyards and marketing steps were taken. 'Made in Provence' saw the light of day. Modern and technically perfect wines, while retaining authenticity. The vineyards are now being expanded with the planting of new varieties in order to be able to vary the offer and thus respond to new developments.
