One of the wineries we visited during Sicilia en Primeur was the Cottanera winery located in the Etna DOC region. On my blog you can read about this great tour.
One of the wines we tasted was this lovely Etna Bianco. I retasted this one in the Netherlands so here are my notes:
The soil of Calderara, a mixture of black pumice and basalt, enhances the typical minerality of the Carricante variety. The white wine had a maceration for about 24 hrs, followed by cold setting; 40% of the must ferments in French oak tonneaux, the remaining part in cement tanks.
Matured 12 months, 40% in French oak tonneaux on yeast,the remaining part in cement tanks.
The Single-vineyard 2017 has a bright citrus yellow color with green reflections.
On the medium nose aromas of citrus, apricot and green apple with hints of white flowers and sage.
On the palate dry, medium bodied with medium acidity and nice freshness. It’s light creamy with a nice saltiness and balance. Flavours are a recall of the nose. The finish is medium+ with a nice freshness.
Pairing with Tartar Steak, Tortelloni filled with ricotta and spinach, seasoned with butter and sage, Tuna Steak with aromatic herbs.
