Clos Dominic Vinyes Baixes is a blend wity Cabernet Sauvignon, Merlot, Picapoll, Garnacha Tinta and Cariñena varieties by the Clos Dominic winery in the DOQ. Priorat.
Clos Dominic is a small project that was set up in 2002 by the couple Dominic Bairaguet and Paco Castillo. Located in Porrera, a village in the heart of Priorat (Tarragona), they grow their own vines and make their own wines. An artisan work that is only carried out by family members to ensure maximum quality in each of their products.
Clos Dominic Vinyes Baixes comes from old vines planted in the lower part of the Estate. A total of 7 hectares lying at an altitude of 430 metres and aged between 60 and 100 years old. They use respectful agriculture with organic and biological products. The harvest is carried out manually in small boxes and the best clusters are selected in the vineyard itself.
Once the Clos Dominic Vinyes Baixes grape has been harvested, it reaches the winery in under 3 hours ready to begin the winemaking process. It macerates for a month and ferments spontaneously with native yeasts in stainless steel tanks. The wine is then aged for 16 months in French oak barrels. Finally, it is gently filtered, bottled and allowed to rest a few months before going to market.
My tasting notes:
In the glass a dark cherry red color with violet rim.
On the medium+ nose aromas of blackberries, plums and black cherries with hints of earth, chocolate, wood smoke, sweet spices and tobacco.
On the palate dry, medium++ bodied with medium acidity and medium well integrated tannins. Layered and light savoury with flavours that are a recall of the nose accompanied with hints of balsamico and liquorice. Good, long and persistent finish.
