Champagne Vuillin Jean-Paul - The Knight Champagne, Brut Reserve (90 TSW)
Yesterday was the start of our three week vacation so we plopped this beautiful bottle of bubbles.
A blend of 90% Chardonnay and 10% Pinot Noir
The grapes are hand-picked and then lightly pressed to release the first juice that is used to make the wine. Only the first press juice, which is the highest quality and contains the purest characteristics of the grapes is used in the final blend. The final blend is a combination of the grapes selected from this year and reserve wines from grapes selected in previous years.
Once final blend is in the bottle, natural yeast is added and the bottles are rested in deep chalk cellars for 4 years where they transform from a still wine into exquisite Champagne. The coloured range of bottles are decorated with specially engraved tin labels, applied by hand to each bottle one by one.
My tasting notes:
In the glass a bright golden yellow color. Nice soft mousse and tiny persistent bubble.
On the medium+ nose aromas of citrus, green apple and pears with hints of brioche, cream and flowers.
On the palate dry, medium bodied with nice roundness and freshness. The final is long with a light bitter aftertaste.
The name, ‘The Knight’, was chosen to honour Paul Eroger and all of those heros who sacrifice their lives for freedom.
