Champagne Palmer & Co - Rosé Réserve
Pairing Suggestions
Champagne Palmer & Co Rosé Réserve (90 TSW)
Blend of 45% Chardonnay, 40% Pinot Noir, 15% Pinot Meunier.
During our stay in Burgundy we celebrated my girlfriends birthday with this lovely bubble.
The grapes are picked by hand at the end of September, with very strict selection. The grapes are stalked and pressed in the vinification cellar and undergo a temperature-controlled alcoholic fermentation with wild (grape-specific) yeasts on stainless steel tanks, followed by malolactic fermentation and maturation on the "lie". Subsequently, 8% older red wine ("vin de réserve" - solera) is added to the young wine in order to achieve consistent quality and identity. Sugar and yeast are then added and the wine is then bottled and sealed with a crown cap. During the second fermentation that follows, carbon dioxide is created ('prize de mousse') and only after a period of 36 months is the yeast sediment removed ('dégorgement') and 8 grams of sugar ('dosage') added to the flavor indication 'extra brut '.
My notes:
In the glass a pale pink color with orange rim. Fine and persistent bubble.
On the medium nose aromas red berries, dried red fruit, citrus and hints of toast and vanilla.
On the palate dry, medium+ bodied with medium+ acidity showing flavours of strawberries, raspberries and spices. The finish is medium with light almond taste.
Palmer & Co is founded in Avize in 1947 and moved to the center of Reims in 1959. Thanks to their extensive network of cooperating winemakers, they have a wide range of premier and grand-cru vineyards in Montagne de Reims (Pinot Noir, but also surprisingly good Chardonnay), Sézanne (Chardonnay), Verzenay and Mailly (Pinot Noir). Palmer & Co is very successful with its champagnes and has often been distinguished by international wine magazines such as Decanter and Wine Spectator. Not only top quality, but also a fantastic value for money!
