Champagne Gremillet - Cuvée Évidence (90 TSW)
This Valentine's weekend I had an Instagram break but that doesn't mean we didn't enjoy good wines. This 100% Chardonnay - Cuvée Évidence was the bottle we opened on Sunday. A very delicate choice I must admit.
This Champagne is composed of only the cuvée (first press). Selection of the best Chardonnay. Alcoholic and malolactic fermentation in oak barrels for 6 months. Ageing of 4 years minimum. BRUT Dosage at 7 gr/l with a liqueur d’expédition coming from finished bottles of Champagne.
Gentle vinification in wood gives him more aromatic complexity while preserving the freshness of the chardonnay. An atypical, rare champagne!
My tasting notes:
In the glas aa bright golden yellow color.
The mousse is fine and light creamy with a fine and persistent bubble.
On the medium nose you can find aromas of yellow apple, pear, citrus and vanilla with hints of white flowers, hay, brioche and spices.
On the palate dry, medium bodied with nice acidity and freshness. Very inviting flavours which are a recall of the nose. Easy going and delicate with light bitterness in the finish.
The perfect match would be the delicate flesh of scallops, fine fowl or a free-range chicken.
The Gremillet estate was founded by Jean-Michel Gremillet in 1979 when he inherited a plot of land with vines from his mother, Lulu. Today, the house has more than 40 hectares of vineyards and is located in a small village 45 kilometers from Troyes - the historic capital of Champagne.
