The history of Castello di Ama started in the seventies. A number of families bought a hamlet with historic vineyards, with the aim of restoring them. Lorenza Sebasti Pallanti, one of the founders, is the current owner and together with her husband and winemaker Marco Pallanti she has made Castello di Ama one of the most prestigious wine estates in Italy.
About the wine:
In the first two weeks of September, the grapes are harvested manually, with very selective work. In the cellar, the grapes are individually selected, destemmed, crushed and vinified. First of all, temperature-controlled, alcoholic fermentation with wild grape yeasts takes place on stainless steel tanks for 21 to 23 days.
Then pressing takes place and the different young wines are crossed over to clean stainless steel tanks for malolactic fermentation. In mid- December, the wine is assembled and matured on oak barriques, 20% of which are new, over a 12-month period. After this, another assembly takes place and the wine is given a short rest period on stainless steel tanks, after which it is bottled unfiltered.
My tasting notes:
First gave the wine a quick decanter with the Vspin.
In the glass a medium ruby red color.
On the medium+ nose delicate aromas of cherries, prunes with hints of violets, black tea, vanilla, cedar and light tobacco.
On the palate dry, medium++ bodied with medium+ acidity and medium tannins. Great and long finish. A long live ahead. Will open the next bottle in 3 years.
