A sparkling wine made from the Cortese variety. The winery’s objective has always been to make wines whose features are unmistakeably linked to the terroir, and to achieve this attention is focused on the Cortese grape variety, emblematic of the Gavi production zone. The territory is situated between Piedmont and Liguria.
About the wine:
The grapes are hand-picked from the estate vineyards and the clusters are pressed gently and progressively, yielding several must fractions; the must is fermented in steel with cultured yeasts. In the spring, the wine is given the liqueur de tirage; it then re-ferments in the bottle and matures sur lie for 18 months before being disgorged.
My tasting notes:
In the glass a bright golden yellow color.
Elegant fine mousse and persistent.
On the medium nose aromas of stonefruit, lime, yellow plums and light pineapple with hints of hay, flowers, yeast and honey.
On the palate dry, medium bodied with medium acidity and nice freshness. Soft and light creamy flavours of ripe yellow apple, lime, herbs, toastt and spices with a light almond finish.
