Cantine Fina - Caro Maestro 2014
Pairing Suggestions
Cantine Fina - Caro Maestro 2014 (87 TSW)
Blend of 70% Cabernet Sauvignon, 25% Merlot and a splash of Petit Verdot.
The name Caro Maestro means Dear Teacher. This is Bruno Fina's tribute to his teacher the great Giacomo Tachis. Giacomo Tachis is reknowned as the father of the Super Tuscan. He was responsible for producing Sassicaia, Tignanello and Solaia with the Antinori family.
The vines for the Caro Maestro red wine grow in the Cantine Fina vineyards in the highlands outside Marsala near the sea on the west coast of Sicily at an altitude of 300-450 m. The vineyards therefore benefits from two climate related moderators - its altitude, where it can take advantage of the sea breezes and the significant temperature compensator, which is the sea itself.
The harvesting is done manually followed by careful sorting and destemming of the grapes.
Fermentation is done on the skins in temperature controlled stainless steel tanks. Maturation takes place in French oak barriques for 24 months.
My tasting notes:
This Sicilian Bordeaux blend shows a deep ruby red dress.
On the medium+ nose aromas of dark cherries, blackberries and plums with hints of caramel, chocolate and some spices and eucalyptus.
On the palate dry, medium+ bodied and medium+ tannins. It has a round mouthfeel with concentrated flavours but still with nice freshness. The medium finish shows a little bitterness.
Food pairing based on lamb, boiled meat, veal kidney, duck with orange, roasted game and, in general, meat dishes with an intense flavour.
