Hello 2021!! First wine on the 2021 timeline.
Biodynamic winery Cantine del Notaio from the Basilicata region has several vineyards. A total of 40 hectares all located around Mount Vulture. The height of the vineyards varies from 400 to 600 meters above sea level. Traditionally, Aglianico grapes are grown on the slopes of Mount Vulture.
The grapes for Il Sigillo are obtained from a historic vineyard on the Contrada Cerentino hill in Maschito.
The manual harvest of the Aglianico grapes is at the end of November in the beginning of December.
Then the fermentation takes place in stainless steel tanks with temperature control. This fermentation takes 30 days so with a full extraction and maturation of the tannins. The wine is aged in French oak barriques for 24 months. After bottling, the wine is stored in the tuff caves of the winery for a 24-month maturation in the bottle.
My tasting notes:
In the glass a deep dark ruby red color.
On the medium(+) nose aromas of dried plums, dark cherries and chocolate with hints of herbs, cigarbox, cloves, licorice and spices.
On the palate dry, full-bodied with medium(+) acidity and soft tannins. Concentrated and warm flavours of dark ripe cherries, moccha, espresso, mint and licorice with a long chocolate finish.
This Il Sigillo 2011 wine combines well with grilled or roasted red meat, lamb or mutton, but also with game dishes. Also with tasty cheeses and chocolate desserts.
