Pairing Suggestions
Today on my way to Vinitaly. To get in the mood we cracked this very nice Montefalco. Highly structured wine produced with 100% Sagrantino grapes from vineyards around the hills of Montefalco, in the heart of Umbria. Cantina Tudernum - Fidenzio Montefalco Sagrantino 2011 (89 tsomw points)
In the glass a garnet ruby red colour with brown rim.
On the nose intense aromas of spices, leather with ripe red fruit, barrique and vanilla.
On the palate full-bodied with great mouthfeel with fine grained tannins showing blackberries, dark cherries vanilla, licorice and tobacco.

Winemaker notes:
For the production of this wine, proud of Terra Umbra, we use Sagrantino grapes (100%) obtained from selected vineyards owned by the Tudernum winery.
The peelings are macerated for 18/22 days, after which the time of contention arrives in which the wine is separated from the marc (discharged skin).
To give more harmony and roundness to the wine, it is kept in French oak barrels where it will remain refined for at least one year. The overall refinement therefore takes at least 33 months, with due regard for the bottled.
The result is a very intense wine both in the nose and in the mouth. Because of its organoleptic properties, it is advisable to combine it with highly structured and spicy dishes such as game meat or spiced and seasoned cheeses. Serve at 18 °
