Last week I had a zoom meeting with Catina Tollo where they presented their new line, which is made from indigenous grapes and with a sustainable packaging, features five wines certified both organic and vegan. The wines pay homage to the surrounding natural environment with an incredible flora and fauna biodiversity. The five wines include Montepulciano d’Abruzzo Dop, Trebbiano d’Abruzzo Dop, Cerasuolo d’Abruzzo Dop, Terre di Chieti Passerina Igp and this Terre di Chieti Pecorino Igp
Each wine is identified by a handmade pencil drawing featuring five bioindicators. The stag beetle, living in the fierce old woods of Maiella mountain, stands out on the label of white Terre di Chieti Pecorino Igp.
The whole packaging aims at respecting nature. The capsule is PVC-free, the label is made from recycled paper and cotton fibers, and the box too is made of recycled cardboard.
Cantina Tollo want to cast a light on insects which are the daily companions of our grape growers and are the minuscule keepers of the vineyards, helping preserving the natural balance. Today, more than ever before, they have to carefully observe the signals of the environment, understand it, respect the Earth and produce in a sustainable and conscious way.
There was only one problem with the production process of the bottle which aren’t sustainable. Tollo opted for the bottle shape that was used a hundred years ago in Abruzzo, but could not find a supplier who could supply a variant that matched the sustainable concept. Now they are too heavy to be sustainable.
About the wine:
100% Pecorino, from vineyards in Chieti province at 130 meters. Harvested in the last ten days of September, the Pecorino grapes underwent destemming, cryomaceration, soft pressing, cold decanting and control of the clear must fermentation temperature. Fermentation and aging were accomplished in stainless steel tanks.
In the glass apale citrus yellow color.
On the medium nose aromas of melon, yellow plu mand peach with hints of lime zest, white blossom and salinity.
On the palate dry, medium bodied with vivid acidity and freshness. Round and fresh in the mouth with a recall of the nose with a light bitterness in the medium finish.
