Pairing Suggestions
Cantina Tollo - Terre di Chieti Passerina IGP, 2019 (87 TSW)
This is one of the five new wines from Catina Tollo (Abruzzo region)
Since June new on the market.
These wines, also certified vegan, guarantee the absence of the use of substances of animal origin throughout the production cycle; even the packaging of the bottles is no different as it is eco-sustainable. The organic line, intended for the restaurants is now also available in the Netherlands at Heijsterkamp Wijnkopers.
Passerina is both a rare local white grape that is found in the Marche, in Italy and a DOC for wines of the same name. Many researchers have studied its identity, so to boast an extensive bibliography and a high number of citations of the grapes on the most famous treatises of ampelography. Passerina has large berries, high yields and a long ripening period. It makes appealing wines with clear, focused fruit.
My tasting notes:
Vinification at low temperature, no malolactic fermentation, 4 months aging in stainless steel.
In the glass a bright citrus yellow color.
On the medium+ nose aromas of apricot, white peach and pear with hints of white flowers, sage and a dot of honey.
On the palate dry, medium bodied with nice acidity and freshness. Elegant and with flavours that are a recall of the nose. Medium intense final with almond hints.
