Appellation: Marche IGT / Ascoli Piceno
Vinification: A kind of cold pre-maceration is carried out: the freshly harvested grapes are placed in the refrigerator at about 1 degree Celsius, useful to ensure that the aromatic substances present in the skin of the berries get a good concentration in the flesh. This is followed by gentle membrane pressing of the whole bunch of grapes, but only the free-range must is introduced into the vats for fermentation without maceration. After fermentation, the wine matures for 20 months in new oak to which 6 months of steel is added before bottling

My tasting notes:
In the glass a deep golden yellow color.
On the medium (++) nose aromas of ripe pear, banana and yellow plums with hints of butter, cedar, flowers, orange peel, almond and spices.
On the palate medium (++) bodied with medium acidity and complex mouthfeel. Every sip brings different nuances, very concentrated and rich with a light bitter touch in the persistent finish.
To pair with: blue cheese dishes, cod, paella, chicken and curry prawns with basmati rice.
About the winery:
The Macondo Winery was born on the hills of the province of Ascoli Piceno, an area suited for successful viticulture. The Bianko 2018 by Macondo aka Lorenzo Catasta, produced from 60% Trebbiano grapes and 40% Pecorino from their own vineyards, is the result of maniacal work and sustainable agriculture with the use of the classic copper sulfur as protection products in a very limited way and tries accompany the wine when ripe with the utmost respect for the grapes. We are dealing with a true craftsman.
