Currently they have a vineyard area of about 10 hectares in the countryside of Dorgali, precisely in the valley of Oddoene, an area particularly suited for producing excellent wine. The great passion of viticulture, with all its intriguing aspects and facets, is certainly of Santa Antonio who transmitted it, involving the whole family. Serena and Francesco, in fact, a few years ago formed a company, FranSer, which deals with the production and bottling of wines.
The wine, produced with absolutely artisan methods, is produced and bottled in their cellar in Viale Kennedy in Dorgali. 75% of the vineyards are of the Cannonau variety, the best-known vine in Sardegna and that finds its classic habitation in the area and throughout the eastern coast.
The current wine production is around 6.000 liters, but they are optimistic! In the coming years they expect to produce 30/40 thousand bottles of excellent wine.
The grapes of their youngest vineyards, carefully harvested and selected with manual harvesting, are crushed, de-stemmed and transferred into wooden vats where they carry out the alcoholic fermentation. The fermentation takes place in contact with the skins with repeated daily pressing done by hand, for a duration of about 10 days. At the end, the wine obtained is transferred to steel tanks where the malolactic fermentation takes place and subsequently refines.
My tasting notes:
In the glass a bright ruby red color.
On the nose aromas of ripe red plums, red berries and raspberries with well integrated hints of herbs and sweet spices.
On the palate dry and medium-bodied and easy drinking with soft tannins and medium acidity. Well balanced with a nice mineral aftertaste.
It goes well with pasta dishes with meat sauce, stewed and grilled red meat, game and aged cheeses.
