This Tuscan white wine is an expression of both varietal Viognier and Chardonnay cultivated on the most chalky terroir of the estate. First vintage was in 2006.
After harvesting by hand immediate pressing of the whole bunches. Alcoholic fermentation in barrels and tonneaux (indigenous yeasts only) for approximately 2-3 months. Stirring of the lees between 1 and 3 times a week, from 3 to 5 months depending on year. Aging into French barrels and tonneaux until July of following year. Then 2 months in concrete tank before bottling.
My tasting notes:
In the glass a golden yellow color.
On the medium nose aromas of yellow apple, yellow plums and apricot with hints of cedar, honey, smoke, white pepper and dried flowers.
On the palate dry, medium bodied with medium acidity and freshness. Round and elegant in the mouth. Light nutty, creamy with yellow fruits and herbs in the back. Very nice limited white wine.
