SOF is the new rosé from Tenuta Campo di Sasso, designed by and dedicated to Sophia Antinori, the daughter of Marchese Lodovico. The grapes, Cabernet Franc and Syrah, are selected in the San Giovanni vineyard, located on the gently sloping slope in Bibbona, not far from the Tuscan coast of the Alta Maremma.
The soil type is loam with sand, silt and a small percentage of clay. The sea breeze provides good healthy ventilation of the vineyards, creating a good temperature difference between day and night. This maintains freshness and develops complexity. The grapes are picked at the end of August in the very early hours of the morning
The grapes are gently and very lightly pressed after a short maceration period. During this short period, winemaker Helena Lindberg assesses the precious juice to obtain the specific color and taste that Sophia and Lodovico Antinori desired. The juice then passes through the alcoholic fermentation in a temperature controlled stainless steel tank. The wine rests in stainless steel vats for five months prior to bottling.
My tasting notes:
In the glass medium pink salmon color with copper reflections.
On the medium nose aromas of raspberries, peach and strawberries with hints of white flowers, rose petals and citrus.
On the palate dry, medium bodied with medium acidity and nice freshness. Good balance and a nice and elegant finish.
Perfect with fried fish, salads, white meat dishes, fushion in cuisine genre, sushi but also salami and medium-aged cheeses.
