While visiting Cortona – Tuscany we tasted this unique Trebbiano on the Baracchi – Il Falconiere estate.
Baracchi - Astore Trebbiano IGT Toscana Bianco (85 tsomw points)
In the glass a straw yellow color with greenish and golden rim.
On the nose intensive aromas of lemongrass, green apple and peach with hints of acacia flowers and herbs.
On the palate full-bodied, concentrated and dry, med-high acidity with nice freshness, light savory with green apple and lemon and light astringent finish.
Winemaker notes:
Trebbiano was harvested on the first week of October from a 30 year old vineyard , a careful selection was made of the best Trebbiano grapes in August. Once picked 16 small cases, the grapes were immediately transfer to the winery (this is important in maintaining the varietal characteristics). Immediately after a soft pressing starts the alcoholic fermentation and maceration on the skins. They took place in stainless steel tanks over a period of about 10 days at a temperature never exceeding 14 °C. Following the alcoholic fermentation, the wine remained on the lees (sur lie), during this time it completed its malolactic fermentation. The wine was kept at a temperature of 12°C to obtain a natural clarification.
The resulting wine is rich in colour, well structured and with a good freshness. Followed by aging for about 6 months in bottles before release.
