On the nose aromas of flowers, citrus, passion fruit and pear.
On the palate lots of fruit, fresh and well structured. Very nice white wine.
Winemakers notes:
SOIL: Good sun exposure, limestone-clay grain size and structure.
GRAPE VARIETIES: Vermentino.
CLIMATE: Mediterranean, mild winters with limited rainfall, summers dry, hot and windy.
HARVESTING: Using refrigeration at the moment of harvest.
VINIFICATION TECHNIQUE
All the initial operations, soft pressing and natural decantation, take place at a constant temperature of 10- 12 °C in an oxygen-free environment, in order to preserve the must from oxidation. Fermentation takes place at a controlled temperature of 16-17 °C and lasts around 15-20 days.
FOOD MATCHES
Excellentas an aperitif with seafooddishes and shellfish; to accompany sushi, sashimi and starters, light whitemeat and fishdishes.
