Antinori / Castello della Sala - Conte della Vipera
Pairing Suggestions
Antinori / Castello della Sala - Conte della Vipera (90 TSW)
The wine is produced from a careful selection of 80% Sauvignon Blanc and 20% Sémillon. Conte della Vipera is a tribute to the original owners of the castle and its label shows an illustration of San Giovanni’s chapel (Saint John), a small chapel located on the estate.
Castello della Sala is located in the Umbria region, not far from the Tuscan border, about 18 kilometers from the historic city of Orvieto. The Medieval castle’s property extends over an area of 500 hectares (1235 acres), 170 hectares (420 acres) are planted with vineyards at an altitude that varies between 220 and 470 meters above sea level (722/1541 feet) on the gently rolling hillsides that characterize the beautiful countryside in this area.
My tasting notes:
In the glass a bright citrus yellow color.
On the medium(+) nose aromas of pear, green apple and pineapple with hints of blossom, kiwi and lemon.
On the palate dry, medium bodied with medium(+) acidity and nice freshness. Flavours of grapefruit, peach, citrus, fresh cut grass, green apple and laurel. The finish has a long and intense light almond finish.
Antinori is perhaps Italy's most famous winery. For more than six centuries and 26 generations, this family business has been at the top of the Italian wine world. They are known for their eye for tradition and at the same time their continuous drive for developments and innovation. Antinori has vineyards and castles scattered all over Italy. Each region and each grape has its own character, which they reflect in the taste of the wine.
