The Orvieto Classico Superiore San Giovanni della Sala di Antinori was born in vineyards in the area around the Castello della Sala, in Umbrian near the border with Tuscany at 18 kilometers from the historic city of Orvieto. The wine is named after the church from the 15th century: San Giovanni.
It is produced with 50% Grechetto, 25% Procanico and 25% Pinot Bianco and Viognier grapes, harvested entirely by hand from the second week of September. Fermentation takes place separately by variety, whereby some of the grapes are subjected to a short cold maceration and the other is pressed directly in stainless steel tanks at a temperature of 16 ° C. The wine ripens on its lees for several months in order to subsequent mounting and bottling.
My tasting notes:
In the glass a light citrus yellow color with green reflections.
On the medium(+) nose aromas off citrus, apricot and passionfruit with hints of white flowers and peach.
On the palate dry, medium bodied with medium acidity and nice freshness. Good structure and balance with flavours that ara a recall of the nose. Pleasant and lively aftertaste.
This white wine pairs perfectly with seafood and shellfish starters, pasta with fish or chicken and is ideal in combination with fresh cheeses.
