The Spanish winery Acústic Celler is located in the northern Marça (province of Tarragona) and is without a doubt the success story of this young appellation. 2004 was only his first millésime, but in the meantime he has made a name for himself as the top producer of Montsant (the area that surrounds the DO Priorat). Pure and fruity wines with a full and Mediterranean character are his trademark.
Acústic is both the name of the bodega and the entry wine of this domain. This name was chosen because Albert wants to be one with the region, the soil and nature, and wants to reflect its authenticity in his wines. Viticulture and vinification takes place in the purest form; people work here according to the biodynamic winemaking techniques without going overboard.
Albert places little emphasis on vinification. For him, 99 percent of the wine consists of work in the vineyard. He attaches great importance to old vines. His investments are therefore mainly focused on the purchase of old vineyards and not on building a 'state of the art bodega'. The grapes are grown organically and all the work in the vineyard and also the picking is manual. He works with French oak barrels with a very light toasting.

My tasting notes:
In the glass a very bright straw yellow color.
On the nose aromas of apple, melon and pear with smoky hints of tropical fruits, vanilla and toast.
On the palate dry, medium+ bodied with nice freshness and acidity and a little fatness which makes is round and balanced. In the finish a light nutty and spicy finish.
Very pleasant white wine which will pair perfect with fish, shellfish, poultry and fresh cheese.
