This Valpolicella Classico Superiore comes from the cellars of the Santa Sofia winery, produced in hilly areas of Fumane and Marno, all located in the famous Valpolicella DOCG.
This wine is made using grapes Corniva and Corvinone 70% and Rondinella 30%, harvested between the first and third week of September. After de-stamping, the grapes wither about 40 days. This is followed by pressing with soft crushers, for the extraction of virgin must.
Fermentation is obtained in tanks with temperature control in stainless steel. The maturation is reached after 24 months, with 30% of the product in French oak barrels and 70% inSlavonic oak. Aging is bottled, with at least 12 months of rest.
My tasting notes:
In the glass a dark ruby red color with garnet reflections.
On the nose intense aromas of prunes, cherries and smoke with hints of earth, violets, leather, vanilla and balsamico notes.
On the palate dry, well balanced and full-bodied with soft tannins showing flavours of cherries, blueberries and barrique notes mixed with spices and cinnamon.
Nice long and persistence aftertaste.
A great pairing for braised or stewed dishes, cheese lasagna and creamy pasta. Also an excellent accompaniment to mature cheeses.
