After some years in the cellar it was time to open this 100% Negroamaro from the Puglia region.
I Valle Dell Asso - Piromafo Salento Negroamaro 2008 (88 tsomw points)
In the glass a dark ruby red color with garnet reflections.
On the nose intensive aromas of cherries, blackberries, liquorice with hints of balsamico and nuts.
On the palate soft and round, good balance with nice acidity (not to sweet) and freshness. I keep one bottle for 3 more years.

Soil: medium-textured and relatively loose
Rearing System: spur pruned cordon

Fermentation Method: fermented in stainless steel tanks at controlled temperature.
Aging: 12/18 months in big oak barrel

Serving temperature: 18-20°C
The Piromàfo from Cantina Fiorentino is based on Negroamaro: the intense scent of tobacco leafs, coffee and liquorice is supported by the taste from softness and extreme longevity which make it perfect for meat.
