Cantine Silvestri - Merlot Dante 2015
Pairing Suggestions
Cantine Silvestri – Dante Merlot 2015 ( 80 points )
In the glass a ruby red color with a garnet hue.
In the nose expressive aromas of cherries, blackberries, blue berries and some light herbs.
On the palate good structure, light tannins, soft in the mouth, fruity with a light bitter aftertaste.
Vineyards: Grapes come from vineyards in the comune of Aprilia, part of the comunes of Cisterna and Latina, and the province of Rome.
Winemaking Technique: Grapes are picked by hand, pressed and de-stemmed before they macerate on the skins for 7 - 8 days at about 25° C. The must from the first-pressing ferments in stainless steel vats, then ages in barrels of Slavonian oak. After bottling, the wine continues to age for a further 5 - 6 months before going on sale
Advice from the winemaker: A wine with ageing potential. Allow to breathe before ser ving by carefully decanting into a carafe. Serve at 18° C.
Gastronomical suggestions: A perfect accompaniment for savoury pasta dishes, such as pappardelle in hare sauce, for roast or barbecued meats, and for mature cheeses.
