Pairing Suggestions
Blend of Negroamaro and Primitivo. Alcohol: 14.5%. The wine has a ruby ??red, black color. In the nose a complete bouquet of fruit with plums, dark fruit, vanilla and spices. On the palate again lots of dark fruit, spices, cocao, leather and tobacco. Full-bodied with a soft and long finish.
Vine varieties: Red vine varieties typical of the Salento area.
Vines per ha: 4500 bush vines.
Production area: San Marzano, Salento, Puglia. Vines are grown at an altitude of around 100 meters above sea level. The soil is clayey and not very deep, with a good presence of rocks. Medium/high temperature in summer, with good evapotranspiration.
Harvest period:September.
Vinification: Hand-harvest of lightly overripe grapes; destem-ming and crushing; Cold pre-fermenting maceration; alcoholic fermentation with autochthonous yeasts. Final drawing off with soft pressing machines.
Ageing: Malolactic fermentation in stainless steel tanks; ageing in fine French wood barrels for about 12 months.
Ageing potential: A wine that preserves its organoleptic characteristics for 7 years.
Serving temperature: About 18°C.
