Pairing Suggestions
Lots of charred, woodsy notes and some aromatic spice up front on the nose. Lean strawberry, cherry, and lavender underneath and on the palate, with some sandalwood. The acidity is present, but not pronounced and fine grained tannins carry through the mid-palate and the brief finish.
The vineyards of the Villa Doria wines are the Cappallotto Estate in Serralunga d'Alba in the heart of the Langhe region. This Estate is four generations in the possession of the Lanzavecchia family. The 19 ha. Vineyards are located in a hilly area and is fully planted with vines. It uses modern techniques but with respect for tradition. They have also joined the group Biotipico 'with strict guidelines for the use of chemical agents.
Ageing: The wine is aged for a total of 38 months, in medium and large sized Slavonian oak barrels for around 18 months, and then the remaining time in fibre-glass, concrete and steel tanks. It is a wine with great ageing potential and loves to rest for long periods in large barrels. It is a tannic wine and its tannins need tempering in wood and constant oenologist attention.
Food pairings: Red meat based, braised dishes and game, aged cheeses. Excellent with the traditional dishes of the Langhe.
Serving temperature: 20 C°. It is advisable to open the bottle an hour before serving.
